Firstly I'd take a bullet proof vest.

Having said that I was in Tulum January 2018 for 6 days. Sailed 2 of them one day on 9m. and the second on 11m. Wind was pretty much onshore but there were some nice waves. Beach access is a bit of an issue unless you are staying on the beach.
