That's a great deal! Would you know if MFC has any plans to make higher aspect wings that would be compatible with these existing sets?

They are coming out with a KT edition more high aspect foil. I have tested out the pre-production in the summer at nimpkish.
As for the Hydros 2 and Helios, both sets are interchangeable. The Helios is more high aspect. I have been on the 1400 Hydros 2 as my go-to for the last year and feel no reason to go higher aspect. It’s plenty fast and it excels on waves. Awesome foil for people with a bit of experience.
