We stopped by the launch spot opposite the big rock slide on the way to mountain bike in the Southern Chilcotins. After some exploring and asking some neighbours this looks to be the only land accessible launch spot where the wind is. Middle of Lake on Highline road.

This is private property, there are many signs, we met the owner and he made it clear that no one is welcome to sail there. You have to know him personally. So please don't sail there, he just wants to enjoy his property alone. This is the spot with the outhouse with half a door on the lake side of the railway. The road is brutally rough and requires high clearance anyway.

Thanks for the update Ryan. I have always wanted to go back there but it sounds like you were in the same place that I described, and it would be a bad idea now.
When we went there, many decades ago, there was no “private property” signage and people frequently camped and sailed from that spot. Times change.
