I think it's only 540°. 720° if he landed on the same direction he took off, but he landed on the opposite side.

I don't know much about windsurfing but....In snowboarding that would be a 7, because he does a 5 with one invert (head and shoulders below the board in the air). So, it's like a "double cork 1080" which is really just a flat spin 360 combined with two off-axis inverts. ;)

Interesting, I'd never heard of Brad Drummond, it says he sails in Whistler (I've never seen a windsurfer there), he should come to Squamish and teach us a few things.
